Ingredients
- 1/2 cup Eden Dry Black Beans, soaked
or Eden Dry Kidney or Pinto Beans - 1 1/2 cups fresh organic tomatoes, diced
- 7 ounces Eden Crushed Tomatoes
- 1 clove garlic, pressed or finely minced
- 1/4 cup minced fresh parsley
- 1/2 cup diced red onion
- 2 tsp Eden Apple Cider Vinegar
- 3/4 tsp Eden Sea Salt
- 1 tsp minced cilantro, optional
- 3/4 tsp EDEN Cumin Powder
- 1/2 tsp EDEN Dried Basil and/or Dried Oregano
- 1 tsp minced jalapeno
Directions
Cook beans per package directions. When done, drain and allow to cool. Combine all ingredients in a medium bowl, mix, cover and chill for 1 hour, allowing the flavors to blend. Serve with organic corn chips.
