Black Bean Tomato Salsa

Black Bean Tomato Salsa

Serves 16 | Prep Time 1 hour 10 minutes | Cook Time 1 hour 20 minutes


1/2 cup Eden Dry Black Beans, soaked
or Eden Dry Kidney or Pinto Beans

1 1/2 cups organic tomatoes, diced

7 ounces any Eden Crushed Tomatoes

1 clove garlic, pressed or finely minced

1/4 cup minced fresh parsley

1/2 cup diced red onion

2 tsp Eden Apple Cider Vinegar

3/4 tsp Eden Sea Salt

1 tsp minced cilantro, optional

3/4 tsp ground cumin

1/2 tsp dried basil or oregano


Cook beans per package directions. When done, drain and allow to cool. Combine all ingredients in a medium bowl, mix, cover and chill for 1 hour, allowing the flavors to blend. Serve with organic corn chips.
