• 1/2 cup Eden Dry Black Beans, soaked
or Eden Dry Kidney or Pinto Beans
• 1 1/2 cups fresh organic tomatoes, diced
• 7 ounces Eden Crushed Tomatoes
• 1 clove garlic, pressed or finely minced
• 1/4 cup minced fresh parsley
• 1/2 cup diced red onion
• 2 tsp Eden Apple Cider Vinegar
• 3/4 tsp Eden Sea Salt
• 1 tsp minced cilantro, optional
• 3/4 tsp EDEN Cumin Powder
• 1/2 tsp EDEN Dried Basil and/or Dried Oregano
• 1 tsp minced jalapeno
Cook beans per package directions. When done, drain and allow to cool. Combine all ingredients in a medium bowl, mix, cover and chill for 1 hour, allowing the flavors to blend. Serve with organic corn chips.
