Ingredients
- 1 Tbsp Eden Extra Virgin Olive Oil
- 1 clove garlic, minced
- 1/4 cup onion, minced
- 1 1/2 cups fresh organic diced tomatoes
- 15 ounces Eden Garbanzo Beans, do not drain
or cooked Eden Dry Garbanzo Beans - 2 tsp mild curry powder
- 1/3 cup unsweetened dried coconut
- 1/2 tsp Eden Sea Salt
- 10 ounces spinach leaves, fresh or frozen, chopped
- 2 Tbsp fresh parsley, minced for garnish
Directions
In a large sauce pan, heat the oil and sauté the garlic and onions for 2 to 3 minutes. Add all remaining ingredients except the spinach and parsley. Cover, bring to a boil and cook over medium heat for 10 minutes. Add the spinach, mix, cover and simmer on low for 2 to 3 minutes, just until the spinach is bright green. Serve and garnish with parsley. Great served over cooked basmati rice or Eden Quinoa.
