Ingredients
- 1 cup Eden Black Soybeans, 1 can drained
- 1 cup Eden Crushed Tomatoes
- 1 1/2 cups fresh tomato, diced
- 1/2 cup red bell pepper, diced
- 1/3 cup yellow bell pepper, diced
- 1/2 cup red onion, minced
- 1/3 cup fresh parsley, minced
- 3 Tbsp lime juice, freshly squeezed
- 2 tbsp Eden Red Wine Vinegar,
- 2 Tbsp lemon juice, freshly squeezed
- 2 Tbsp green onion, chopped
- 1 tsp Eden Cumin Powder
- 3/4 tsp Eden Sea Salt
- 1/2 tsp Eden Coriander
or 2 tsp dried cilantro flakes - 1 clove garlic, minced
Directions
Combine all ingredients in a bowl. Add extra citrus juice and seasoning, if desired.
