1 cup Eden Black Soybeans, 1 can drained

1 cup Eden Crushed Tomatoes
orEden Crushed Tomatoes with Onion, Garlic & Basil

1 1/2 cups fresh tomato, diced

1/2 cup red bell pepper, diced

1/3 cup yellow bell pepper, diced

1/2 cup red onion, minced

1/3 cup fresh parsley, minced

3 Tbsp lime juice, freshly squeezed

2 tbsp Eden Red Wine Vinegar,

2 Tbsp lemon juice, freshly squeezed

2 Tbsp green onion, chopped

1 tsp ground cumin

3/4 tsp Eden Sea Salt

1/2 tsp ground coriander
or 2 tsp dried cilantro flakes


Toss ingredients together in a bowl. Add extra citrus juice and seasoning, if desired.
