Ingredients
- 25 ounces Eden Crushed Tomatoes
- 28 ounce organic whole stewed tomatoes, do not drain
- 2 Tbsp onion, chopped
- 2 Tbsp Eden Red Wine Vinegar
- 2 cloves garlic, chopped
- 1 1/2 tsp Eden Sea Salt
- 1/2 cup fresh basil, chopped
- 1/2 cup green bell pepper, chopped
- 1/2 tsp Eden Cumin Powder
- 1 medium red bell pepper, seeded and small diced
- 1 small cucumber, peeled, quartered, and chopped
Directions
Place all ingredients except the cucumber and red pepper in a blender or food processor. Pulse until smooth. Place in serving bowl. Mix in cucumber and red pepper. Chill for 2 hours and serve.
