Ingredients
- 30 ounces Eden Pinto Beans, 2 cans, drained
- 1 Tbsp Eden Shoyu Soy Sauce, or to taste
- 1 Tbsp lemon juice, freshly squeezed
or lime juice - 2 tsp Eden Ume Plum Vinegar, or to taste
- 1 tsp Eden Galic Powder
- 1 tsp Eden Cumin Powder
- 1 tsp Eden Cayenne Pepper, or to taste
- 1 1/2 cups fresh organic tomatoes, diced
- 1 Tbsp fresh parsley, or fresh cilantro, chopped
- 1/4 cup green onions, chopped
- 1/2 cup green bell pepper, chopped fine
- 1 Tbsp minced jalapeno
Directions
In a blender or food processor, combine beans, shoyu, lemon or lime juice, ume plum vinegar, garlic, cumin and cayenne. Blend well, adding reserved tomato juice a small amount at a time until desired consistency is reached. Fold in tomatoes, parsley or cilantro, green onion, green pepper, and jalapeno by hand. Serve with organic corn chips.
