Ingredients
- 1/2 cup Eden Quinoa, rinsed
- 1/2 cup Eden Red Quinoa, rinsed
- 1 Tbsp Eden Extra Virgin Olive Oil
- 1 clove garlic, minced
- 1/4 cup onion, diced
- 1/4 cup green bell pepper, diced
- 1/3 cup organic tomato, diced
- 1/4 cup fresh or frozen sweet corn
- 15 ounces Eden Small Red Beans, drained, reserve liquid
- 2 cups water, including bean cooking liquid
- 1/4 tsp Eden Sea Salt
- 1/4 cup green beans, sliced in 1/2 pieces
Directions
Heat oil in a medium saucepan and sauté onions and garlic 2 to 3 minutes. Add remaining ingredients except the green beans. Cover, bring to a boil, reduce heat to medium-low, and simmer for 10 minutes. Add green beans, cover, and cook another 5 minutes until green beans are tender. Remove from heat and serve.
