Ingredients
- 1 tsp Eden Toasted Sesame Oil
- 2 tsp Eden Extra Virgin Olive Oil
- 1 cup diced red onion
- 1 cup sliced mushrooms
- 1 tsp Eden Shoyu Soy Sauce, optional
- 1 cup Eden Hulled Buckwheat, rinsed and drained
- 2 cups boiling water
- 1 cup chopped green cabbage
- 1/2 cup thickly sliced carrots, or rutabaga
- 1/2 cup Eden Sauerkraut, or to taste
- 2 Tbsp minced chives, scallions, or parsley, for garnish
Directions
Heat oils in a medium saucepan and sauté onion for 2 to 3 minutes. Add mushrooms and shoyu and sauté 2 to 3 minutes. Add buckwheat and sauté 3 minutes. Add all remaining ingredients except parsley. Cover and simmer on low for 20 minutes. Place in a serving dish and garnish with chives. Add more sauerkraut if desired.
