Buckwheat with Sautéed Vegetables & Sauerkraut

Serves 4 | Prep Time 10 minutes | Cook Time 25 minutes

Ingredients

• 1 tsp Eden Toasted Sesame Oil

• 2 tsp Eden Extra Virgin Olive Oil

• 1 cup diced red onion

• 1 cup sliced mushrooms

• 1 tsp Eden Shoyu Soy Sauce, optional

• 1 cup Eden Hulled Buckwheat, rinsed and drained

• 2 cups boiling water

• 1 cup chopped green cabbage

• 1/2 cup thickly sliced carrots, or rutabaga

• 1/2 cup Eden Sauerkraut, or to taste

• 2 Tbsp minced chives, scallions, or parsley, for garnish

Directions

Heat oils in a medium saucepan and sauté onion for 2 to 3 minutes. Add mushrooms and shoyu and sauté 2 to 3 minutes. Add buckwheat and sauté 3 minutes. Add all remaining ingredients except parsley. Cover and simmer on low for 20 minutes. Place in a serving dish and garnish with chives. Add more sauerkraut if desired.
