Tomato Black Bean Gazpacho

Tomato Black Bean Gazpacho

Ingredients

  • 28 ounces organic whole tomatoes, do not drain
  • 14 ounces Eden Crushed Tomatoes
  • 1 medium onion, chopped
  • 1/3 cup fresh parsley, packed and chopped
  • 1/4 cup Eden Red Wine Vinegar
  • 2 cloves garlic, chopped
  • 1 tsp Eden Sea Salt, or to taste
  • 2 tsp minced jalapeno
  • 3 Tbsp Eden Extra Virgin Olive Oil
  • 1 medium cucumber, peeled, seeded and chopped fine
  • 1 medium red bell pepper, seeded and chopped fine
  • 2 cups cooked Eden Dry Black Beans, see package directions
    or 15 ounces canned, drained EDEN Black Beans
  • several drops hot sauce, if desired
  • 2 Tbsp finely chopped green onions

Directions

Place the first nine ingredients in a blender or food processor and pulse until smooth. Remove and place in a bowl. Mix in the cucumber, red bell pepper and black beans. Chill for 1 to 2 hours. Place in serving bowls, add a drop of hot sauce to each and garnish each with scallions.
