Ingredients
- 1 cup precooked, leftover Eden Short or Medium Grain Brown Rice
- 1 cup Eden Soft White Pastry Wheat Flour, or Kamut Flour
- 1/2 cup organic coarsely ground cornmeal
- 1/4 tsp Eden Sea Salt
- 1 cup Original Edensoy Extra, Original, or Unsweetened
- 1/4 cup water
- 2 1/2 tsp non-aluminum baking powder
- 1 Tbsp Eden Apple Cider Vinegar, or Brown Rice Vinegar
- Eden Safflower Oil, or Sesame Oil, for oiling skillet or griddle
Directions
Mix the cooked brown rice, flour, cornmeal, sea salt and baking powder together. Combine wet ingredients and whisk in with the dry. Lightly oil a cast iron skillet or pancake griddle, and ladle batter to form a circle. Cook until browned on the underside. Flip the pancake over and brown the other side. Place the pancake on a serving platter. Repeat the above steps until all batter has been used. Serve with pure maple syrup, Eden Apple Butter, Eden Cherry Butter, Eden Apple Cherry Butter, Eden Apple Cherry Sauce, Eden Apple Sauce, Eden Apple Strawberry Sauce, Eden Cherry Concentrate.
Yields 8 pancakes, 2 per person
