Rigatoni Pasta Salad

Ingredients

  • 12 ounces Eden Kamut & Buckwheat Rigatoni, 1 package
  • 24 ripe pitted olives, low sodium variety
  • 1 1/2 cups organic tomatoes, diced
  • 1/2 cup red onion, minced
  • 1/4 cup fresh parsley, minced
Dressing

Directions

Cook pasta as package directs, rinse, drain and place in a mixing bowl. Add olives, tomatoes, onion and parsley. Prepare the dressing by mixing all ingredients. Pour the dressing over the pasta ingredients and mix thoroughly. Serve room temperature of chilled.
