Ingredients
- 30 ounces Eden Kidney Beans, 2 cans, rinsed and drained
- 1/4 cup red onion, minced
- 1/2 cup organic tomatoes, diced
- 1 medium cucumber, peeled if waxed, chopped
- 1/3 cup pitted black or Kalamata olives, sliced
- 1/4 cup Eden Extra Virgin Olive Oil
- 1/4 cup lemon juice, freshly squeezed
- 2 cloves garlic, minced
- 1/4 tsp Eden Black Pepper
- 1 Tbsp fresh oregano, or 1 tsp dried oregano
- 2 Tbsp green onion, finely chopped
or fresh parsley
Directions
In a large mixing bowl combine the beans, onion, tomato, cucumber and olives. In a small bowl whisk together the olive oil, lemon juice, garlic, pepper, oregano and green onions. Pour over the bean mixture and toss to thoroughly mix. Refrigerate for 1 hour before serving.
