Ingredients
- 1 cup organic long grain brown rice, washed and drained
- 1 1/2 cups water
- 1/2 cup onion, diced
- 1 clove garlic, minced
- 1 Tbsp Eden Extra Virgin Olive Oil
- 15 ounces Eden Small Red Beans, drained
- 1 1/2 cups organic diced tomatoes, do not drain
- 1 pinch Eden Sea Salt
- 2 Tbsp fresh parsley, minced
- 2 tsp minced jalapeño
Directions
Heat oil in a sauce pan. Sauté garlic and onions for 2 to 3 minutes. Add rice and sauté 3 minutes. Add water, tomatoes, jalapeño and sea salt. Cover and simmer for 1 hour. Toss in the red beans and mix. Remove, place in a serving dish and garnish with parsley.
