Red Bean Rice

Red Bean Rice

Serves 4 | Prep Time 5 minutes | Cook Time 1 hour 5 minutes

Ingredients

1 cup organic long grain brown rice, washed and drained

1 1/2 cups water

1/2 cup onion, diced

1 clove garlic, minced

1 Tbsp Eden Extra Virgin Olive Oil

15 ounces Eden Small Red Beans, drained

1 1/2 cups organic diced tomatoes

1 pinch Eden Sea Salt

2 Tbsp fresh parsley, minced

2 tsp minced jalapeño

Directions

Heat oil in a sauce pan. Sauté garlic and onions for 2 to 3 minutes. Add rice and sauté 3 minutes. Add water, tomatoes, jalapeño and sea salt. Cover and simmer for 1 hour. Toss in the red beans and mix. Remove, place in a serving dish and garnish with parsley.
