Ingredients
- 2 Tbsp Eden Extra Virgin Olive Oil
- 1 medium onion, finely diced
- 1 large carrot, finely diced
- 1/2 cup Eden Sliced Shiitake Mushrooms, soak 5 minutes, reserve soaking water
- 1/4 tsp Eden Sea Salt
- 1/2 tsp Eden Ground Thyme
- 3 3/4 cup cold water, including shiitake soaking water
- 1 whole dried bay leaf
- 1/2 cup Eden Dried Montmorency Cherries, chopped
Eden Dried Wild Blueberries, or Eden Dried Cranberries - 1 cup Eden Wild Rice, washed and drained
- 1 cup organic long grain brown rice
- 1/2 cup walnuts, dry pan roasted and chopped
or pecans - 1 Tbsp fresh parsley, finely minced
Directions
Heat oil in medium saucepan, and sauté the onion and carrot for 2 to 3 minutes. Add the wild rice, brown rice, bay leaf, thyme, sea salt, shiitake, dried cherries and water. Cover and bring to a boil. Reduce heat to medium low and simmer for 45 minutes to 1 hour. Remove and discard the bay leaves, and place the rice in a bowl. Add the walnuts and parsley. Toss together with the rice and serve.
