Ingredients
- 12 ounces Eden Vegetable Spirals, or any Spiral Pasta
- 16 whole pitted Kalamata olives, or jumbo black olives
- 2 cups fresh organic tomatoes, diced
- 15 ounces Eden Kidney Beans, drained
- 1/3 cup red onion, finely chopped
- 1/4 cup fresh parsley, minced
- 1/2 cup cucumber, chopped
- 1/4 cup Eden Extra Virgin Olive Oil
- 1/4 cup Eden Red Wine Vinegar
- 2 cloves garlic, minced
- 1 Tbsp Eden Dried Oregano
- 1 tsp Eden Shoyu Soy Sauce
Directions
Prepare pasta as package directs, rinse and drain. Add olives, tomatoes, beans, onion, parsley, cucumber and mix. Prepare dressing and mix into the salad. A great salad served room temperature or chilled.
