• 12 oz Eden Vegetable Spirals, or any E_span class="brand"_den_/span_ Spirals
• 16 whole pitted Kalamata olives, or jumbo black olives
• 2 cups fresh organic tomatoes, diced
• 15 oz Eden Kidney Beans, drained
• 1/3 cup red onion, finely chopped
• 1/4 cup fresh parsley, minced
• 1/2 cup cucumber, chopped
Dressing
• 1/4 cup Eden Extra Virgin Olive Oil
• 1/4 cup Eden Red Wine Vinegar
• 2 cloves garlic, minced
• 1 Tbsp Eden Dried Oregano
• 1 tsp Eden Shoyu Soy Sauce
Prepare pasta as package directs, rinse, drain and place in a bowl. Add olives, tomatoes, beans, onion, parsley, cucumber and mix. Prepare dressing and mix with pasta. Great served chilled or room temperature.
