Ingredients
- 2 cups cabbage, shredded, blanched 2 minutes, rinse, drain
- 1/2 cup scallions, thinly sliced
- 1/2 cup red bell pepper, chopped
- 1 cup organic sweet corn, fresh or frozen, blanched 1 to 2 minutes
- 1 1/2 cups organic diced tomatoes
- 1 1/2 cups leftover cooked organic basmati rice
or organic long grain rice - 15 ounces Eden Black Soybeans, 1 can, drained
- 1 tsp freshly grated ginger root
- 1/2 cup organic orange juice
- 1/4 cup Eden Brown Rice Vinegar
- 2 Tbsp Eden Barley Malt Syrup
or organic maple syrup - 2 Tbsp Eden Sesame Oil
- 2 Tbsp Eden Toasted Sesame Oil
- 1 Tbsp Eden Shoyu Soy Sauce
- 1/8 tsp Eden Black Pepper
- fresh parsley, chopped
or cilantro
Directions
Prepare the sesame orange vinaigrette by blending all dressing ingredients in a blender or food processor.
Toss all ingredients in a large mixing bowl. Just before serving, add enough dressing to thoroughly coat the ingredients. Garnish with parsley.
