Ingredients
- 15 ounces Eden Black Soybeans, 1 can drained, reserve liquid
- 1 cup organic diced tomatoes
- 1 clove garlic, minced
- 1/2 tsp Eden Ground Cumin
- 1 tsp Eden Ume Plum Vinegar
- 1 Tbsp Eden Extra Virgin Olive Oil
- 2 Tbsp red onion, minced
- 2 tsp fresh parsley, minced
or fresh cilantro - 1/8 tsp Eden Cayenne Pepper
- 1 tsp minced jalapeno
Directions
Place all other ingredients in a blender, and blend until smooth and creamy, adding the reserved bean cooking water a little at a time until it is the right consistency.
