Ingredients
- 15 ounces Eden Garbanzo Beans, reserve cooking liquid (aquafaba), rinse and drain
- 4 ounces Eden Pistachios
- 1/3 cup fresh mint leaves, coarsely chopped
- 1/4 cup fresh parsley, coarsely chopped
- 2/3 cup aquafaba, (chickpea cooking liquid)
- 1/4 cup Eden Extra Virgin Olive Oil
- 3/4 tsp Eden Sea Salt
- 2 pinches Eden Ground Cumin
- 2 pinches Eden Ground Coriander
Directions
Place all ingredients in a food processor or blender and blend until smooth and creamy, adding a small amount of reserved bean cooking liquid to desired consistency. Garnish with fresh mint and pistachios. Serve with warm pita or raw vegetables such as cucumber slices, carrots and celery sticks, tomato slices, radishes, etc.
