Ingredients
- 6 cups mixed baby salad greens
- 1 medium cucumber, sliced into rounds
- 3 medium organic tomatoes, sliced into wedges
- 1 cup red onion, sliced into thin half-rings
- 1/4 cup Eden Extra Virgin Olive Oil
- 1/4 cup water
- 1 Tbsp Eden Yellow Mustard
- 1/8 tsp Eden Sea Salt, or to taste
- 2 cloves garlic, minced or pressed
- 1/4 cup scallions, thinly sliced
- 2 Tbsp fresh parsley, chopped
- 2 tsp organic maple syrup, optional
- 1 Tbsp Eden Red Wine Vinegar
Directions
Place all dressing ingredients in a blender and blend until creamy. Arrange salad vegetables on individual plates and spoon dressing over.
