• 6 cups mixed baby salad greens
• 1 medium cucumber, sliced into rounds
• 3 medium organic tomatoes, sliced into wedges
• 1 cup red onion, sliced into thin half-rings
Dressing
• 1/4 cup Eden Extra Virgin Olive Oil
• 1/4 cup water
• 1 Tbsp Eden Yellow Mustard
• 1/8 tsp Eden Sea Salt, or to taste
• 2 cloves garlic, minced or pressed
• 1/4 cup scallions, thinly sliced
• 2 Tbsp fresh parsley, chopped
• 2 tsp organic maple syrup, optional
• 1 Tbsp Eden Red Wine Vinegar
Place all dressing ingredients in a blender and blend until creamy. Arrange salad vegetables on individual plates and spoon dressing over.
