Lentil Ditalini Pasta Soup

Lentil Ditalini Pasta Soup

Ingredients

  • 1/2 cup Eden Dry Lentils
  • 6 cups water
  • 1 clove garlic, minced
  • 1/2 cup diced onions
  • 1/4 cup diced celery
  • 1/4 cup diced carrots
  • 1 whole dried bay leaf
  • 1 tsp Eden Sea Salt
  • 1/2 cup Eden Ditalini
  • 1/4 cup sweet corn, fresh or frozen
  • 1/2 cup chopped spinach, fresh or frozen
  • 2 Tbsp fresh minced parsley

Directions

ace the first seven ingredients in a heavy pot, bring to a boil, cover, reduce flame to medium low, and simmer approximately 1 hour or until tender. Add sea salt and ditalini. Simmer uncovered about 10 minutes. Remove bay leaf and discard. Mix in spinach and parsley, cook 2 minutes and serve.
