Heat oil in saucepan and sauté onions for 1 minute. Add remaining ingredients, except kamut flakes. Cover and bring to boil. Add kamut flakes, cover, and reduce heat to low. Simmer 3 minutes. Remove from heat and mix in pistachios before serving.
