Ingredients
- 2 Tbsp Eden Extra Virgin Olive Oil
- 1 medium onion, diced
- 3 cloves garlic, chopped
- 1 Tbsp dried rosemary
- 2 bay leaves
- 1 cup carrots, chopped
- 2 medium organic potatoes, peeled, chopped
- 6 cups water or vegetable stock
- 8 ounces vegetable ribbon pasta, or Eden Spelt Ribbons
- 28 ounces organic diced tomatoes, do not drain
- 15 ounces Eden Great Northern Beans, do not drain
- 1 cup organic sweet corn, fresh or frozen
- 1 cup green peas, fresh or frozen
- 2 tsp Eden Sea Salt
- 1/4 tsp Eden Black Pepper
Directions
Heat oil in a soup pot, sauté onions and garlic until onions are translucent. Add herbs and sauté briefly. Add carrots, potatoes, water, tomatoes and beans. Cover and bring to a boil. Reduce the flame to medium-low and simmer 20 minutes. Meanwhile cook pasta as package directs, rinse and drain. Add corn, peas, salt and pepper. Cover and simmer 5 minutes. Place pasta in each bowl, top with soup and serve.
