Peel garlic and mince. Peel and seed avocados. Mash avocados with a potato masher or pulse in a food processor until smooth. Add all remaining ingredients. Place in a serving bowl. Serve with organic corn chips, tortillas, burritos, botana or your favorite Mexican fare.
