Ingredients
- 6 Tbsp Eden Extra Virgin Olive Oil
- 1/2 tsp Eden Sea Salt
- 1 1/4 Tbsp Eden Red Wine Vinegar
- 2 tsp lemon juice, freshly squeezed
- 1/2 tsp Eden Black Pepper
- 12 ounces Eden Kamut & Buckwheat Rigatoni
- 3/4 cup Eden Diced Tomatoes, drained
- 1 medium cucumber, peeled if waxed, diced
- 2 Tbsp small capers, rinsed
- 2 Tbsp fresh parsley, finely chopped
- 1/2 cup pitted black olives
- 2 Tbsp fresh basil, finely chopped
- 1 Tbsp fresh oregano, finely chopped
- 2 Tbsp fresh mint leaves, finely chopped
- 1 cup Eden Garbanzo Beans, drained
- 2 cups mixed baby salad greens
Directions
Mix the salad dressing ingredients together and set aside. Cook the pasta as package directs, rinse and drain. Place the pasta in a bowl and add all remaining ingredients except the baby salad greens. Mix in the salad dressing just before serving. Serve over the baby salad greens.
