Ingredients
- 2 Tbsp Eden Extra Virgin Olive Oil
- 1 clove garlic, minced
- 1 cup onion, diced
- 1 1/2 cups organic bulgur
- 2 cups water
- 1/2 cup carrots, diced
- 1/2 cup Eden Dried Montmorency Cherries, coarsely chopped
or Eden Dried Wild Blueberries, or Eden Dried Cranberries - 1/4 tsp Eden Sea Salt
- 3 Tbsp pine nuts, dry pan roasted
- 15 ounces Eden Garbanzo Beans, drained
- 1 Tbsp fresh parsley, minced
- 2 Tbsp lemon juice, freshly squeezed
- 2 tsp fresh mint leaves, minced
or fresh parsley, minced
Directions
Heat oil in a sauce pan, sauté garlic and onion for 2 to 3 minutes. Add the bulgur, water, dried fruit and sea salt. Cover and bring to a boil. Reduce flame to low and simmer for 10 minutes or until tender. Turn off the flame, leave covered and let sit for 10 minutes until bulgur is tender and all water has been absorbed. Place in a mixing bowl and fluff with a fork to cool. Mix in the beans, lemon juice, pine nuts, mint and parsley. Place in a serving bowl.
