Ingredients
- 1/4 package Eden Small Vegetable Shells, Spiral, Ribbon, Ditalini, or Elbow pasta, (about 3 ounces)
- 1 Tbsp Eden Extra Virgin Olive Oil
- 1 medium onion, chopped
- 2 cloves garlic, chopped
- 1/2 cup celery, chopped
- 1 medium organic potato, chopped
- 4 cups water
- 14 1/2 ounces organic diced tomatoes, do not drain
- 15 ounces Eden Kidney Beans, do not drain
- 15 ounces Eden Navy Beans, Cannellini, or Great Northern Beans, do not drain
- 1 medium red bell pepper, chopped
- 1/4 cup fresh parsley, chopped
- 2 Tbsp Eden Shoyu Soy Sauce
- 1/2 tsp Eden Dried Basil
- 1 cup spinach, chopped
Directions
Cook pasta according to directions, rinse, drain and set aside. Heat oil in a soup pot, sauté onions and garlic until onions are translucent. Add potato, celery, and water. Simmer until vegetables are tender. Add tomatoes, beans, basil and red pepper, simmer 5 minutes. Add pasta, parsley, spinach and shoyu. Simmer 5 minutes.
