Ingredients
- 14 ounces Eden Crushed Tomatoes
- 1 1/2 cups fresh tomatoes, diced
- 1 medium cucumber, diced
- 1 cup green bell pepper, diced
- 1/2 cup red bell pepper, diced
- 1/2 cup yellow bell pepper, diced
- 1/4 cup fresh parsley, minced
- 3 Tbsp Eden Red Wine Vinegar
- 1 1/2 tsp Eden Sea Salt
- 3 Tbsp lemon juice, freshly squeezed
- 3 Tbsp lime juice, freshly squeezed
- 2 cloves garlic, minced
- 1 tsp Eden Cumin Powder, or Ground Coriander
- 1 tsp Eden Dried Basil
or 1 Tbsp minced fresh basil - 1 tsp dried cilantro or Eden Coriander
Directions
Working in batches, blend all ingredients in a blender except the fresh tomatoes, bell peppers and cucumber. Pour into a medium mixing bowl. Add the fresh tomatoes, bell peppers, cucumber and mix. Chill for at least 1 hour before serving. Great with corn bread.
