Dashi - Dried Daikon, Shiitake and Kombu Stock

Dashi - Dried Daikon, Shiitake and Kombu Stock

Ingredients

  • 1/4 cup Eden Dried Daikon Radish, rinsed, soaked in cold water to cover for 10 minutes, chopped
  • 4 Eden Whole Shiitake Mushrooms, soaked in warm water to cover for 20 minutes, reserve soaking water
    or 1/4 cup Eden Sliced Shiitake Mushrooms (no need to soak)
  • 1 piece Eden Kombu, 3 to 4 inches long
  • 4 cup water, including reserved shiitake and dried daikon soaking waters

Directions

Place all ingredients in a medium saucepan, cover and bring to a boil. Reduce the flame and simmer 5 minutes. Remove the kombu and set aside for future use or discard. Cover the pan and simmer another 10 minutes. The stock is now ready to season with Eden Shoyu Soy Sauce, or any Eden Miso. Great over any cooked Eden Udon or Soba.
