Ingredients
- 8 oz Eden Kamut Udon
or any Eden Udon or Soba - .88 oz Eden Whole Shiitake Mushrooms, 1 package, soak 20 minutes in 1 cup hot water
or Eden Sliced Shiitake Mushrooms - 1 cup pea pods, chopped
- 3 cups broccoli, chopped
- 1/4 tsp Eden Hot Pepper Sesame Oil
- 2 tsp Eden Sesame Oil
- 2 cloves garlic, minced
- 1 medium red bell pepper, chopped
- 1 Tbsp Eden Mirin
- 1 Tbsp Eden Brown Rice Vinegar
- 1 1/2 Tbsp Eden Shoyu Soy Sauce
- 1 Tbsp Eden Kuzu Root Starch, dissolved in 1/4 cup cold water
- 1/2 cup green onions, thinly sliced
Directions
Cook pasta as package directs, rinse, drain and set aside. Reserve shiitake soaking liquid, discard stems and slice tops. Cook mushrooms in soaking water for 15 minutes. Heat oil, sauté broccoli and pea pods for 2 minutes. Add red pepper and garlic, sauté for 1 more minute. Add mushrooms, cooking liquid, mirin, brown rice vinegar, and shoyu. Bring to a boil. Add dissolved kuzu, stirring constantly, cook until mixture thickens and becomes clear. Serve over pasta and garnish with green onions.
