Ingredients
- 8 ounces Eden Spelt Soba, or any Soba
- 1 quart water
- 12 inch piece of cotton string, for tying noodles before cooking
Directions
Tie the string tightly around the top of the bundle of noodles, about 1 inch from the end. Bring the water to a boil, add the noodles and with a fork, fan the noodles out at the untied end. Cook according to package directions. Remove, rinse and drain. Cut the tied end of the noodles off and discard hardened end and all string. Place the noodles on a platter in a straight row. They are now ready to use in sushi. One package of noodles will make approximately 3 to 4 sushi rolls.
NOTE: If you want to cook these a head of time, follow all steps but do not cut until ready to use. The noodles will stick together after sitting. Simply rinse again, before removing the harden area where the string is attached, and they will come apart.
