• 7 oz Eden Soba
• 1 qt water
• 12 inch piece of cotton string, for tying noodles before cooking
Tie string tightly around the top of the bundle soba, about 1 inch from the end. Bring water to a boil, add soba and using a fork, fan soba stands out at the untied end. Cook according to package directions. Do not over cook. Remove, rinse and drain. Cut the tied end of the noodles off and discard hardened end with the string. Place soba on a platter in a straight row. They are now ready to use in making soba sushi. One package of noodles will make approximately 3 to 4 sushi rolls.
