Ingredients
- 12 ounces Eden Kamut Spirals, or any Spiral Pasta
- 6 cups cauliflower, small florets, blanched 3 min., rinse to cool
- 1 cup red onion, coarsely chopped, blanched 2 min., rinse to set color
- 2 Tbsp fresh dill, chopped
or 1 tsp dried dill - 3 Tbsp Eden Extra Virgin Olive Oil
- 2 cloves garlic, minced
- 3 Tbsp lemon juice, freshly squeezed
- 1 tsp Eden Sea Salt
- 1/4 tsp Eden Black Pepper, or to taste
Directions
Cook pasta as package directs, rinse, drain and set aside. Place all ingredients in a mixing bowl, and gently toss to mix. Serve room temperature or chilled.
