Ingredients
- 2 cups Eden Soft White Pastry Wheat Flour
- 1 Tbsp non-aluminum baking powder
- 1 tsp baking soda
- 1 tsp Eden Cinnamon
- 1/2 tsp Eden Sea Salt
- 1/4 tsp ground nutmeg
- 1/2 cup walnuts, coarsely chopped
- 1/3 cup Eden Dried Montmorency Cherries, chopped, or any Dry Fruit
- 1 cup any Eden Apple Sauce
- 1/2 cup Vanilla Edensoy Extra
- 1 Tbsp Eden Apple Cider Vinegar
- 2 Tbsp Eden Safflower Oil
- 1/3 cup organic maple syrup
Directions
Preheat oven to 375°. Lightly coat muffin tin with oil. In a large bowl, combine the first eight ingredients. In a medium bowl combine the Edensoy, vinegar and oil. Let sit 2 minutes. Add the applesauce and maple syrup to the soymilk and vinegar mixture. Combine wet and dry ingredients, mix well. Fill muffin tins three-quarters full. Bake 20 minutes or until a toothpick comes out clean.
