Preheat oven to 375°. Lightly coat muffin tin with oil. In a large bowl, combine the first eight ingredients. In a medium bowl combine the Edensoy and vinegar. Add the applesauce, oil and maple syrup to the Edensoy and vinegar mixture. Stir the wet ingredients into the dry. Fill muffin tins three quarters full. Bake 20 minutes or until a toothpick comes out clean.
