Ingredients
- 30 ounces Eden Lentils w/Onion & Bay Leaf, 2 cans, do not drain
- 1 1/2 ounces organic diced tomatoes
- 2 cloves garlic, minced
- 1/2 cup diced onions
- 1 medium organic potato, diced
- 1/4 cup celery, diced
- 1/4 cup carrots, diced
- 1/2 tsp Eden Oregano
- 1/2 tsp crushed bay leaf
- 1 Tbsp Eden Extra Virgin Olive Oil
- 1/4 tsp Eden Sea Salt, or to taste
- 2 Tbsp fresh parsley, minced
- 1/2 cup Eden Crushed Tomatoes
Directions
Heat oil in a soup pot, sauté the garlic and onions until onions are translucent. Add all other ingredients, cover and bring to a boil. Simmer for 15 minutes. Garnish with parsley.
