• 30 oz Eden Lentils w/Onion & Bay Leaf, 2 cans, do not drain
• 1 1/2 cups organic diced tomatoes
• 2 cloves garlic, minced
• 1/2 cup diced onions
• 1 medium organic potato, diced
• 1/4 cup celery, diced
• 1/4 cup carrots, diced
• 1/2 tsp Eden Oregano
• 1/2 tsp crushed bay leaf
• 1 Tbsp Eden Extra Virgin Olive Oil
• 1/4 tsp Eden Sea Salt, or to taste
• 2 Tbsp fresh parsley, minced
• 1/2 cup Eden Crushed Tomatoes
Heat oil in a soup pot, sauté garlic and onions until onions are translucent. Add all other ingredients, cover and bring to a boil. Simmer 15 minutes. Garnish with parsley.
