Place beans, onion, parsley or cilantro, garlic, salt and 3 Tablespoons lime juice in a blender or food processor. Pulse 8 to 10 times to create a chunky mixture. Scrape down sides of blender. Add the avocado in chunks. Pulse 6 to 8 more times until evenly distributed but still in small chunks. Place in a bowl. Stir in tomatoes and extra lime juice, if desired. Garnish with cilantro or parsley sprigs. Serve with organic corn chips.
