Heat the oil in a medium heavy skillet and saute the onion for 2 to 3 minutes. Add the garlic, mushrooms, and shoyu. Saute about 5 minutes until the onions and mushrooms are tender. Add all remaining ingredients. Simmer on low for about 10 minutes. Remove and place in a serving bowl.
Serve on crackers, toast, as a sandwich spread, or as a party / tapas dip.
