Rosemary Butter Beans

Serves 6 | Prep Time 10 minutes | Cook Time 15 minutes

Ingredients

1 Tbsp Eden Extra Virgin Olive Oil

1 cup onion, chopped

4 cloves garlic, minced

1 cup fresh mushrooms, sliced

1 tsp Eden Shoyu Soy Sauce, optional

15 ounces Eden Butter Beans, rinsed and drained

1 Tbsp dried mixed herbs

1/2 cup organic tomato, diced

1/4 cup Eden Crushed Tomatoes with Onion, Basil & Garlic

1 tsp organic maple syrup

1 Tbsp fresh rosemary, chopped

1/4 tsp Eden Sea Salt

1/8 tsp fresh ground black pepper

1/3 cup water

Directions

Heat oil in medium heavy skillet and saute onion 2 to 3 minutes. Add garlic, mushrooms, and shoyu. Saute about 5 minutes until onions and mushrooms are tender. Add remaining ingredients. Simmer on low for about 10 minutes. Remove from heat.

Serve on crackers, toast, as a sandwich spread, or as a party tapas dip.
