Beet & Sauerkraut Slaw



Place all ingredients in a medium mixing bowl and toss to mix. Let sit for about 1 hour for the flavors to blend.

Note: Prep time includes time to let the salad sit so the flavors blend.

Yield: 7 cups vegetables - 1/2 cup per serving = 14 servings.

Note: To reduce sodium in this recipe, rinse sauerkraut and squeeze out the water before adding to the vegetables.
