Ingredients
- 15 ounces Eden Garbanzo Beans, rinsed, drained
- 15 ounces Eden Kidney Beans, rinsed, drained
- 15 ounces Eden Cannellini Beans, rinsed, drained
or Eden Great Northern Beans - 24 ounces water packed artichoke hearts, quartered
- 3 cups organic diced tomatoes
- 1 cup finely chopped fresh parsley
- 1 1/2 cups thinly sliced celery with leaves
- 1/4 cup Eden Extra Virgin Olive Oil
- 1/4 cup fresh lemon juice
- 2 Tbsp Eden Brown Mustard
- 1 1/2 Tbsp Eden Dried Basil
- 1 1/2 tsp Eden Sea Salt
- 1/4 tsp Eden Black Pepper
Directions
Place all salad ingredients in a mixing bowl. Place all dressing ingredients in a measuring cup and whisk to thoroughly mix. Pour the dressing over the salad and gently toss to mix. Let stand for 1/2 hour before serving to allow the flavors to blend.
