• 15 ounces Eden Garbanzo Beans, rinsed, drained
• 15 ounces Eden Kidney Beans, rinsed, drained
• 15 ounces Eden Cannellini Beans, rinsed, drained
or Eden Great Northern Beans
• 24 ounces water packed artichoke hearts, quartered
• 3 cups organic diced tomatoes
• 1 cup finely chopped fresh parsley
• 1 1/2 cups thinly sliced celery with leaves
Dressing
• 1/4 cup Eden Extra Virgin Olive Oil
• 1/4 cup fresh lemon juice
• 2 Tbsp Eden Brown Mustard
• 1 1/2 Tbsp Eden Dried Basil
• 1 1/2 tsp Eden Sea Salt
• 1/4 tsp Eden Black Pepper
Place all salad ingredients in a mixing bowl. Place all dressing ingredients in a measuring cup and whisk to thoroughly mix. Pour the dressing over the salad and gently toss to mix. Let stand for 1/2 hour before serving to allow the flavors to blend.
