Cut the mochi in half and place on a baking sheet in a 400 degree oven or toaster oven. Bake for 7 to 10 minutes or until the mochi puffs.
While the mochi cooks, coarsely grind the pistachios in a blender or food processor and place in a small bowl.
Bring syrup to a boil in a small saucepan. Reduce heat to low and simmer, stirring frequently, for 5 to 7 minutes. Remove from heat.
When mochi is done, dip each piece in the hot syrup to cover. Then roll in the ground pistachios. Eat while hot.
