Ingredients
- 15 ounces Eden Garbanzo Beans, 1 can drained
or cooked Eden Dry Garbanzo Beans - 1/3 cup carrots, julienned
- 1/4 cup fresh parsley, minced
- 2 Tbsp organic white sesame seeds, dry pan roasted, optional
- 1/4 cup green onions, finely chopped
- 2 Tbsp EDEN Roasted Sesame Tahini
- 1/4 cup cold water
- 1 clove garlic, pressed
- 1 tsp Eden Ume Plum Vinegar, or to taste
- 2 tsp Eden Gomasio, or Garlic Gomasio
Directions
Mix beans, carrots, parsley, sesame seed, and green onions together in a bowl. In a small bowl, blend the tahini, garlic, water, and ume plum vinegar. Pour over the salad, and toss. Season with extra vinegar, if desired. Serve on a bed of crisp lettuce. Sprinkle on Eden Gomasio or Garlic Gomasio.
