Garbanzo Carrot Salad

Ingredients

  • 15 oz Eden Garbanzo Beans, 1 can drained
    or cooked Eden Dry Garbanzo Beans
  • 1/3 cup carrots, julienned
  • 1/4 cup fresh parsley, minced
  • 2 Tbsp organic unhulled tan sesame seeds, dry pan roasted, optional
  • 1/4 cup green onions, finely chopped
  • 2 Tbsp EDEN Roasted Sesame Tahini
  • 1/4 cup cold water
  • 1 clove garlic, pressed
  • 1 tsp Eden Ume Plum Vinegar, or to taste
  • 2 tsp Eden Gomasio, or Garlic Gomasio

Directions

Mix beans, carrots, parsley, sesame seed, and green onions together in a bowl. In a small bowl, blend tahini, garlic, water, and ume plum vinegar. Pour over the salad, and toss. Season with extra vinegar, if desired. Serve on a bed of lettuce. Sprinkle on Eden Gomasio or Garlic Gomasio.
