Place all ingredients, except the reserved bean liquid, in a food processor or blender. Blend adding small amounts of the reserved bean water ( total about 1/3 to 1/2 cup) for desired thickness. A quick, homemade version of this Middle Eastern favorite. We use umeboshi paste for added flavor in place of salt. Serve as a dip with warm pita bread or raw vegetables.
