Ingredients
- 2 cups red leaf lettuce
- 2 cups Boston lettuce or bib lettuce
- 1/2 cup carrot, coarsely grated
- 1 medium cucumber, sliced
- 1/2 cup red onion rings, thinly sliced
- 3 Tbsp Eden Shiro Miso
- 3 Tbsp EDEN Roasted Sesame Tahini
- 2 Tbsp Eden Brown Rice Vinegar
- 2 tsp Eden Brown Mustard
- 1/4 cup fresh orange juice
- 1/4 cup water
- 1 Tbsp parsley, minced
- 2 tsp ginger root, finely grated
Directions
Place the salad ingredients in a salad bowl and toss. Place dressing ingredients in a blender and pulse until creamy. Serve over salad.
